How to Smoke or Fry a Turkey


While oven roasted turkey is probably the most traditional way to prepare turkey many cooks are now turning to alternative ways to prepare this popular dish. Two of those methods include frying and smoking. There are numerous advantages to preparing turkey using these methods. One of the best advantages is that it frees up oven space to cook other dishes. In addition, both smoking and frying result in a very delicious and different dish.

Be aware; however, that you must take extreme care when preparing a turkey using either of these two methods to ensure the bird is completely done. When poultry dishes are cooked completely prior to serving you run a very real risk of food poisoning. To ensure that doesn’t happen with your turkey, it is best to use two thermometers when smoking or frying. One thermometer will be to test the meat and the other will be to test the smoker. Keep in mind that your grill should be between 200 and 250 degrees Fahrenheit. In the event that you happen to be using a charcoal grill instead, remember that you will need to add additional briquettes about every hour or so to keep the temperature at the same level.

Before you begin to cook your turkey, make sure it is thawed completely. In addition, remember that it is best not to stuff your turkey when frying or smoking it. This will help to ensure it cooks thoroughly and completely. Finally, don’t forget to put your wood chips on to smoke at least an hour before you plant to begin cooking your turkey. Remember your turkey should b e cooked until it reaches 180 degrees Fahrenheit. This may take about tow hours. If you check your turkey often you will need to cook it longer.

For fried turkey the fryer should be filled with enough oil to cover one to two inches above the turkey before the turkey is added. The oil should then be heated until it reaches 350 degree Fahrenheit. This may take about an hour. After the oil has reached this temperature the turkey can be lowered into the fryer. For every pound of turkey, cook for three to five minutes. The turkey should begin to float when it is done. To be sure, use the thermometer to check. A cooked turkey should be at a temperature of 180 degree Fahrenheit.
