Generally, if you find that your food is soggy instead of crisp the problem is that your oil is not heated hot enough. On the other hand, if the oil is heated too much, you will have a different problem; the food will burn before it is able to cook completely. At the same time, you must make sure that you maintain a temperature that is high and even while frying foods. You can do this by using a deep fry thermometer. If you are frying in a deep fat fryer, the appliance may come with a pre-installed thermometer. If you do not have a thermometer, you can maintain the temperature by making sure that you do not place too much food at once in the pan.
If you are not working with a deep fryer and instead you are using a shallow frying method, make sure you have a good pan in order to conduct heat appropriately. The pan should have sloping sides, which will prevent the steam from collecting inside the pan. Also make sure that the pan has a heavy bottom, which will prevent warping and allow the heat to be conducted evenly.
When getting ready to fry food it is important to choose the right kind of oil. There are many different types of oil and some of them provide flavoring to food while others are only for cooking. Butter, for example, will add a good taste; however it does not make a good oil for frying.
Some of the best oils for frying include peanut oil, sunflower oil, vegetable oil, safflower oil, grapeseed oil, corn oil and canola oil.
